Roasted Sweet Potatoes with Coconut Cream and Granola

Ingredients:

Sweet Potatoes

Coconut Cream

Cinnamon

1. Preheat oven to 450 F.

2. Wrap washed, whole sweet potatoes in tin foil and bake in oven until tender and soft, about an hour.

3. Remove sweet potatoes from the oven and cut them open.

4. Top with coconut cream, a sprinkle of cinnamon, and a generous helping of Park Lane Pantry granola
