Poached Pear Parfaits

Ingredients:
4 firm pears
1 cup water
1 bottle of white wine
½ cup maple syrup
1 whole vanilla bean
2 cinnamon sticks
4 cups Coconut Yogurt
1 cup light brown sugar
4 Tbsp unsalted butter
1 tsp sea salt
½ cup half & half
1 Tbsp vanilla extract
½ cup pomegranate seeds
1 cup Park Lane Pantry granola
1. Place water, white wine, maple syrup, vanilla bean (bean and the seeds scraped out) and cinnamon sticks in a large pot over medium-high heat and bring to a boil.
2. Lower the heat to medium low and place the peeled and cored pears into the liquid. Cover and cook for 30-35 minutes until pears are tender.
3. While pears are cooking, add brown sugar, butter, sea salt, half & half and vanilla extract to a saucepan and simmer over low heat, whisking constantly until thickened into a caramel sauce, 5-10 minutes.
4. Remove pears from pot and place each one in a separate serving bowl atop a serving of coconut cream.
5. Top with caramel sauce, Park Lane Pantry granola, and pomegranate seeds.
